Avocado Cheddar Quesadillas

Quick, creamy and cheesy are words every recipe should start with and this one does not disappoint. Living in NYC – time and space is gold. I actually had an extra avocado in my fridge, cheese and tortilla (that is a lot of real estate being taken up in my NYC fridge) and just like the show Chopped on Food Network, I took on the challenge to create an awesome quesadilla and clear room in my fridge. The result was a meal I now crave almost as much as my favorite vegetable bacon lol. This is so comforting, tasty and has a surprise kick that it will make you feel like you are chilling on the beach in Mexico with your BFF’s Oprah and Taylor Swift (ok maybe those are my friends in my head.)


Avocado Cheddar Quesadillas Recipe


 

Ingredients

Makes 2 quesadillas

  • 2 medium size flour tortillas
  • 1 avocado sliced thinly or smashed
  • 1/2 of a lime juice
  • Small pinch of salt and pepper
  • 1/8 teaspoon of red pepper flakes
  • 4 slices of sharp cheddar cheese (or 1 cup shredded sharp cheddar cheese)
  • Butter to coat pan and browning
  • Chopped fresh mint for garnish

Instructions

  • Layer half of each tortilla with avocado, lime juice, salt, pepper, red pepper flakes and cheddar cheese – fold in half
  • Heat pan on medium-low, coat bottom of pan with butter
  • Add quesadillas, heat for about a minute then flip (until golden brown on each side)
  • Remove from pan, cut in half, garnish, plate – and enjoy!

  • Boy, does THIS have my name all over it! I love your recipes and cooking tips... I just wish they were simpler so I could make them at home (hahaha - that's a joke ;-) ).
