Quick, creamy and cheesy are words every recipe should start with and this one does not disappoint. Living in NYC – time and space is gold. I actually had an extra avocado in my fridge, cheese and tortilla (that is a lot of real estate being taken up in my NYC fridge) and just like the show Chopped on Food Network, I took on the challenge to create an awesome quesadilla and clear room in my fridge. The result was a meal I now crave almost as much as my favorite vegetable bacon lol. This is so comforting, tasty and has a surprise kick that it will make you feel like you are chilling on the beach in Mexico with your BFF’s Oprah and Taylor Swift (ok maybe those are my friends in my head.)

Looking for something to wash it down? Try my Spanish Wine and Cola Cocktail or if you want to go non-alcoholic Happy Water is so refreshingly good.
I hope you love this citrusy cheesy meal as much as I do! Give it a try and let me know what you think 🙂
