Oh how I love the festival of lights. I have planned an easy, mostly make-ahead meal so you can eat for eight crazy nights and spend less time in the kitchen and more time opening fun gifts. As a child I looked forward to my Mom cooking her famous potato pancakes. The only problem is she would be in the kitchen all day grating potatoes and onions (it’s super labor intensive). I solved that problem and created a recipe (below) that involves no grating and lots of free time. They are so super delish that my Mom even approves :-).
I hope this maps out an easy and yummy holiday! I am sooo GRATEFULÂ that you let me into your homes and dinner tables this Holiday Season – thank you!
Toast to eight crazy nights of fun 🙂
Drink tip: Have one signature Hanukkah cocktail and then wine and beer so that your guests have choices and you are not spending the night with the cocktail shaker!
