3 Mango Recipes We Can’t Stop Making

Mangos are juicy, sweet, and delicious all on their own. But add mango into a pasta, blend it up with wine, or mix it with a smokey herb, and it really becomes crave-worthy delicious!

I recently made for Tom a test recipe involving mangos, and he was so happy that I started to think this fruit must be special because he is so hard to please when it comes to non-meat dishes. Thus began my love affair with this amazing fruit, and I’m excited to share some awesome recipes with you!

Here are 3 of my favorite recipes that I make on a regular basis. I hope you love them and make your family smile like I did Tom when you serve this to them.

I am so excited to see if these recipes make you Chop Happy in the kitchen even when you only have a few minutes to spare.

Happy Cooking, and I am so excited to have you in Chop Happy Land!

1) Mango Wine Slushy (3 ingredients easy)

You won’t believe how easy it is to make this mango slushy. As you sip this, you will taste the tart-sweet mango, fruity wine, and a touch of citrus. To make this even easier, I use store-bought frozen mangos. This eliminates the step of cutting the fruit and freezing overnight because honestly, who has time to wait for a cocktail? So for all my busy home cooks, this is dedicated to you.

2) Chili Mango Salad

This is not your average mango salad. It’s smoky, sweet, and juicy, with just a hint of spice and a touch of mint to round out the flavor. If you follow my blog, you know that bacon is a vegetable in Chop Happy land, and for me to be excited about a fruit salad, it has to have lots of flavor personality.

3) Shrimp Taco Pasta w/ Mango

It’s a Taco Pasta Party! Not only is it super easy, the big bonus is that this recipe has lots of leftovers to make life just a little bit easier.  This creamy smoky sauce is a 3-ingredient dressing that you can use on salads, potato salad, or as a fun southwestern dip. Here, we make it with store-bought chili seasoning that you might already have in your cabinet so it really helps cut down on prep time.
