If you’re like me, you are constantly on the go while thinking about what to eat next. Then when the moment to cook arrives, you realize there isn’t actually much time to make your meal. Here are 3 recipes to help you when you’re crunched for time.
Like many New Yorkers, Tom and I work 12-hours days. We are constantly on the go, so I find that dinner is important to help us wind down. Even our French Bulldog, Charlie, wants quality time. These recipes give me the yum factor I crave all day and are quick so we have more time to chill out together.

1) Mexican Cauliflower Rice
First of all, I am officially obsessed with Mexican cauliflower rice. Not only is it quick and easy, it’s really versatile! There’s sweetness from the tomatoes, smokiness from the cumin, citrus-y brightness from the lime, and subtle heat from the jalapeno.
2) Pesto Pizza (No Oven Required)
No Oven Needed and Sooo Yummers! Just grab focaccia bread and start creating the quickest pizza your family ever made. This is so yummy you will never order take out again. Go crazy with your pizza artist-self. The fun in this recipe is – it’s quick, easy and a great go to weeknight meal.
3) Avocado Cheddar Quesadillas
Quick, creamy and cheesy Quesasillas are words every recipe should start with and this one does not disappoint. his is so comforting, tasty and has a surprise kick that it will make you feel like you are chilling on the beach in Mexico with your BFF’s Oprah and Taylor Swift (ok maybe those are my friends in my head.)
