This is how to make carbonara at home. The main ingredients are just pasta, bacon, eggs, and cheese. So easy and fast!

How To Make Carbonara at Home. This is a super easy one pot recipe that most ingredients you have in your fridge and pantry. Pasta, bacon, eggs and cheese are the main ingredients. Honestly this recipe may have a fancy name but, bacon, eggs and cheese are all this takes to make this at home. This also a super easy one pot recipe that most ingredients you have in your fridge and pantry.  You can even substitute bacon for pancetta, or guanciale (comes from cheek of pig and is smokey sweet). At a restaurant you will probably pay much more for one plate then this whole recipe will cost you for dinner for a family of 4 and leftovers (enough leftovers for dinner the next day)! You can also use any pasta in your cabinet if you do not have spaghetti or bucatini. To make this properly there are a couple of hacks that will help! First of all, I like to boil my pasta the night before and save 1/4 cup pasta water. This will save you 15-20 minutes the next day when you are in a rush to get dinner on the table. Also, while the bacon is sizzling away with its awesome smokey aroma, mix the eggs and cheese in a separate bowl so easy to pour when time to mix with the pasta. Finally, cook the bacon on low-ish heat! This will give the bacon a chance to let out its fat and stay in the pan. The fat mixing with the pasta helps make a sauce when you mix with the egg cheese mixture.

Tom loves pasta and loves when I makes this. It covers all his food groups: bacon, cheese, and pasta oh my! The pasta coats the creamy cheese mixture and causes a velvety sauce that almost looks like butter dancing with noodles. This also a very requested recipe when I do pasta nights with friends. We all get together and hang out, drink wine, and eat tons of pasta. Nothing fancy, all the pasta are displayed in the pot or dish they cooked in. The salad is arugula and lemon and the appetizer always includes a cheese plat someone brings and my famous everything bagel pigs in a blanket! How To Make Carbonara at Home

Ingredients
  

  • 1 pound spaghetti
  • 1/2 pound bacon, pancetta or guanciale
  • 3 tablespoons extra virgin olive oil
  • 3 eggs
  • 1 cup Parmesan cheese
  • 1 teaspoon pepper

Instructions
 

  • First, Cook pasta to package instructions. Save 1/4 cup pasta water.
  • Next, on low heat, fry bacon with extra virgin olive oil for about 2 minutes.
  • Now, while the bacon cooks, mix eggs, Parmesan and pepper in a bowl.
  • Next, add cooked pasta to the hot bacon oil and mix to coat all the spaghetti.
  • Now, shut off the heat, pour in cheese mixture and reserved pasta water. Mix quickly to combine and prevent eggs from scrambling for about 45 seconds.
  • Top with more Parmesan and enjoy.
