Bagel and Lox Quiche with Matzo Pie Crust

Bagel and lox quiche is perfect for Passover. It has a salty buttery matzo pie crust.

Eggs, cream cheese, lox, milk, and everything bagel seasoning make up most of the creamy egg filling. Also, the matzo crust is just 3 ingredients and takes 15 minutes to make. Matzo, butter, and salt are all you need for a Passover pie crust. This dish definitely has a creamy custardy egg quiche filling with a bagel and lox attitude. This is a super easy make ahead breakfast, brunch, lunch, or dinner recipe. I like to make two quiches and freeze one for a fast dinner another day. This way it makes dinnertime much less stressful.
I have to admit I am not a baker so this is super simplistic. You put it all in a blender and bake. I love Passover because when we were kids it was always at our house. My Mom would set up a long table in the dining room (we only eat there for holidays) and invite our whole family. Uncle Al who was soooo funny and Aunt Judy who was friends with why mom since nursery school would also come so it was extra awesome. My family would all gather around and we would eat all Mama Goldsteins best holiday recipes. Then after stuffing ourselves we would wait an hour and the table would have tons of desserts. It was an eating feast and fun with the whole family. Those memories live with me and make me smile every time I make this dish. What was your favorite Passover memory or tradition? Bagel and Lox Quiche With Matzo Pie Crust

Ingredients

Matzo Pie Crust Ingredients:

  • 4 sheets Matzo (egg or regular)
  • 1 stick butter (melted)
  • 1 teaspoon salt

Quiche Filling Ingredients:

  • 1/4 pound Lox (chopped)
  • 1 bunch Chives (chopped)
  • 1 tablespoon Everything Bagel Seasoning
  • 8 ounces cream cheese (soften at room temp)
  • 5 eggs
  • 1/2 cup heavy cream
  • 1 teaspoon salt and pepper

Instructions

Matzo Pie Dough Recipe:

  • Preheat oven at 350.
  • First, place the matzo in the blender and blend to a sand like texture.
  • Next, add the rest of the ingredients and blend to form the dough.
  • Now, press and form on a pie dish.
  • Next, bake on the middle rack for 15 minutes. Watch to make sure it does not burn. If it starts to brown too much cover with foil.
  • Now, set aside to cool for a few minutes.

Quiche Recipe

  • First, in a bowl, mix the quiche ingredients together until well combined. It’s okay to have chunks if cream cheese.
  • Next, pour into matzo crust and bake for an additional 40 minutes (350 degree oven).
  • Finally, top with more chives and enjoy!
