No Roux Mac and Cheese
1 lb shell pasta (cooked)
3 cups sharp cheddar cheese
2 can evaporated milk
8 oz cream cheese
1 pinch salt and pepper
2 jalapeños (de-seeded and chopped)
5 scallions (chopped)
1 tbsp garlic powder
3-4 dashes hot sauce
1 tablespoon of corn starch
First saute jalapeno and scallions in 2 tablespoons butter for 1 minute. Then add 2 cans of evaporated milk and cook to slow boil. Add cream cheese, salt/pepper, garlic powder, and hot sauce. Next add cornstarch to grated cheese and mix. Add cheese to evaporated milk and stir. Now add pasta and enjoy!
